Bamboo Shoots with Spinach in Coconut Milk

Bamboo shoots with (Spinach) in coconut milk, is one of the most popular native dishes in the Philippines. It’s one of the cheapest and healthiest vegetable, before the people knew it especially in the provinces they already cooking it. The original dish usually has “saluyot” or jute leaves but I want to replace it with Spinach as an alternative. Both veggies are nutritiously healthy that helps our body in many ways. 

Bamboo shoots is low in calories, high in fiber, high in potassium, have antioxidant, and been used as traditional ingredients in herbal medication to reduce spasms. It also actively reduces cholesterol level and risks of heart disease. 

Spinach is tag as “World’s Healthiest Vegetables”, high in vitamin C, and "glycoglycerolipids" or helps protect the lining of the digestive tract from damage. Only spinach showed evidence of significant protection against the occurrence of aggressive prostate cancer. And last but not the least, in health-promoting phytonutrients such as carotenoids (beta-carotene, lutein, and zeaxanthin) and flavonoids to provide you with powerful antioxidant protection it has concentrated there and that’s how it’s on top of all the healthiest vegetables on Earth. 

Bamboo shoots with spinach in coconut milk, is one healthy and affordable dish that you should try for your family and loved one. It may be not as grandeur as pizza or big burger around town but definitely the worthiest dish ever. Make some and make a Picture Perfect dish that you can add up to your recipes.
How to make it? Here’s how. Prepare all the ingredients like bamboo shoots, spinach, onion, garlic, ginger, salt and pepper plus sardines or pork slices. Sauté, mix and pour the coconut milk and let it simmer. You can do it the simple way like we used to do or you can make your own style and technique in cooking this dish but above all it’s gonna be worth it. We actually enjoyed it when my sister cooked one afternoon. Definitely a must-have meal!
